SELMI CONCA 100 – Chocolate Conche for Bean to Bar Production
The SELMI CONCA 100 is a key component of the Bean to Bar process, engineered to refine and enhance chocolate by removing residual acidity and humidity. Designed for medium to large-scale chocolate production, the CONCA 100 maximises flavour development through long-cycle conching and oxygenation.
The upgraded mixing system uses a dual-motion design—rotational and orbital—to ensure complete homogenisation and superior aromatic refinement. The conching cycle typically runs between 8 to 12 hours, delivering a final product with exceptional smoothness and flavour clarity.
A user-friendly touchscreen interface allows operators to control time, temperature, emulsion speed, and oxygenation. The system also allows for the storage of custom programs for consistent results.
