Its light pink dry colour develops a reddish hue in recipes and offers a unique technical advantage. With less than 1% cocoa butter, this defatted alkalised cocoa powder increases volume by up to 20% and produces lighter, more stable baked goods compared to standard cocoa powders.
Ideal for low-calorie applications such as sports or diet products, as well as aerated pastries including macarons, croissants, and meringues. Its very low fat content also reduces the risk of fat blooming in spreads.
