Achieve striking depth and bold contrast with Chef Rubber Eclipse Black Cocoa Butter – the deepest, truest black colouring for professional chocolate decoration. Perfect for pralines, figures, and dessert finishing, this premium cocoa butter ensures clean application and a flawless, high-gloss result.
It can be used on its own or mixed directly into melted chocolate, then sprayed, painted, or flicked onto chocolates, moulds, or acetate sheets for artistic transfer effects. Also ideal for spraying cakes and desserts to create a luxurious velvet or matte finish.
For best results, temper before use by heating to 40°C, then cooling to 31–32°C while stirring. Always ensure moulds are not below 15°C to preserve shine. Once painted, crystallize at 22°C, then rest at 18°C for 2 hours for a perfect, even finish.
