Chef Rubber Moulin Rouge Cocoa Butter – 200g
Add a vibrant, deep red colour to your creations with Chef Rubber Moulin Rouge Cocoa Butter, perfect for professional chocolatiers and pastry artists. Known for its intense, true-to-tone pigment, this cocoa butter is ideal for decorating chocolates, pralines, moulded figures, and desserts.
It can be used on its own or mixed directly into melted chocolate, then sprayed or painted — either directly onto chocolate or into a mould. It can also be painted or flicked onto acetate sheets for transferring colour, or used to spray cakes and desserts to create a velvet effect.
For best results, temper the cocoa butter before use — heat to 40°C, then cool while stirring until it reaches 31–32°C. Temperatures may vary when other fats are present, such as milk chocolate, white chocolate, or gianduja. Ensure the surface you apply the cocoa butter to is not below 15°C to maintain shine. After decorating, allow crystallization at 22°C, then rest at 18°C for 2 hours.
