Chef Rubber Crimson Red Cocoa Butter – 200g
Achieve a deep, vibrant crimson red with Chef Rubber Crimson Red Cocoa Butter, perfect for professional chocolatiers and pastry artists. This cocoa butter delivers true-to-tone, bright colour for decorating pralines, moulded chocolates, cakes, and desserts.
It can be used on its own or mixed directly into melted chocolate, then sprayed or painted — either directly onto chocolate or into a mould. It can also be painted or flicked onto acetate sheets for creating transfer designs, or used to spray cakes and desserts to achieve a velvet effect.
For optimal results, temper the cocoa butter before use: heat to 40°C, then cool while stirring to 31–32°C. Temperatures may vary when other fats are present, such as milk chocolate, white chocolate, or gianduja. Ensure the surface you apply the cocoa butter to is not below 15°C to maintain shine. Once painted, allow to crystallize at room temperature (22°C), then rest at 18°C for 2 hours.
