Chef Rubber Key West Green Cocoa Butter – 200g
Achieve vibrant, tropical green tones with Chef Rubber Key West Green Coloured Cocoa Butter, perfect for decorating chocolate pralines, figures, cakes, and desserts. This artisan cocoa butter delivers the brightest, most consistent colours for professional applications.
Use on its own or mix directly into melted chocolate, then spray or paint — either directly onto chocolate or into a mould. It can also be painted or flicked onto acetate sheets for chocolate transfers, or sprayed onto cakes and desserts to create a luxurious velvet effect.
For optimal results, temper the cocoa butter before use: heat to 40°C, then cool while stirring to 31–32°C. Temperatures may vary when other fats are present, such as milk chocolate, white chocolate, or gianduja. Ensure the surface you apply the cocoa butter to is above 15°C to maintain shine. Once painted, allow to crystallize at room temperature (22°C), then rest at 18°C for 2 hours.
