Use it on its own or mixed directly into melted chocolate, then spray, paint, or flick onto chocolate, moulds, or acetate sheets for stunning colour transfers. It can also be used to spray frozen desserts or cakes to create a refined velvet texture.
For best results, temper before use — heat to 40°C, then cool while stirring until it reaches 31–32°C. Room and mould temperatures are key: if the mould surface is below 15°C, the shine may be reduced. After decorating, crystallize at 22°C and rest at 18°C for 2 hours for a perfect finish.
