Create striking and professional finishes with Chef Rubber Alabaster White Cocoa Butter – the purest and brightest white colouring for decorating chocolates, pralines, and showpieces. Perfect for spraying, painting, or flicking techniques, this premium cocoa butter delivers flawless coverage and a refined, even sheen.
It can be applied directly to polycarbonate moulds, mixed into melted chocolate, or used on acetate sheets for transfer designs. Also ideal for spraying cakes and desserts to achieve a smooth, elegant velvet effect.
For perfect results, temper before use by heating to 40°C, then cooling to 31–32°C while stirring. Ensure moulds are not below 15°C to maintain shine and finish. Once decorated, allow to crystallize at 22°C, then rest at 18°C for 2 hours.
