    SOSA Proglacage – 700g

    SOSA Proglacage is a 100% plant-based gelling agent designed for creating high-performance, ultra-glossy glazes that stay stable even after freezing and thawing. Ideal for professional pastry chefs looking for precision, shine, and perfect texture in poured glazes.

    Mode of Use

    • Direct method: Mix Proglacage with sugar, glucose, fruit paste, water, and citric acid. Heat to 100°C. Cool to 35–40°C before glazing.

    • Neutral base method: Mix Proglacage, sugar, glucose, and water. Heat to 100°C, then refrigerate. When needed, combine with fruit purée and citric acid, heat to 80°C, then cool to 35–40°C to glaze.

    • Dosage: 5–10%

    • A prepared neutral base keeps refrigerated for up to 5 days.
