Mode of Use

Direct method: Mix Proglacage with sugar, glucose, fruit paste, water, and citric acid. Heat to 100°C. Cool to 35–40°C before glazing.

Neutral base method: Mix Proglacage, sugar, glucose, and water. Heat to 100°C, then refrigerate. When needed, combine with fruit purée and citric acid, heat to 80°C, then cool to 35–40°C to glaze.

Dosage: 5–10%

A prepared neutral base keeps refrigerated for up to 5 days.
