It functions as a multifunctional bulking agent, protecting membranes and proteins from desiccation during freezing, while creating an anti-humidity barrier that helps maintain texture in foods such as yogurts with crunchy inclusions. Ideal for professional pastry chefs and vegan recipe developers, it can replace sugar in various preparations while improving stability and texture.
