Natural stabilizer for ice cream and sorbet applications, PROFIBER STAB 5 is formulated entirely from 100% plant-based fibers. Free from synthetic emulsifiers and additives, this clean-label solution enhances texture, reduces ice crystallization, and improves shelf life in both dairy and non-dairy frozen desserts. Ideal for artisan and professional use.

Dosage: 0.5% (may be increased to 0.7% for acidic or difficult bases)
Mode of Use:
Disperse thoroughly into a hot or cold ice cream base (up to 85°C) using strong agitation (electric mixer). Allow the base to mature in the fridge for 24 hours to fully hydrate the fibers. Freeze in the shortest time possible for best results.
