SOSA Mannitol (500g)
SOSA Mannitol is a 100% glucose-derived sweetener known for its low caloric content and unique confectionery properties. It melts at 180 °C and caramelizes rapidly, forming an opaque, extremely hard caramel with low moisture retention. With a PAC of 188% and a POD of 60%, it is ideal for creating solid, resistant structures in technical confectionery and decorative applications.
Mode of Use
Melt at 180 °C to obtain an opaque, hard caramel. Incorporate into recipes requiring low humidity and high structural stability, such as decorations, sugar sculptures, or confectionery structures. Use with care due to its rapid caramelization.
