SOSA Kappa Gum is a 100% natural gelling agent extracted from seaweed. It is a super-fast setting gelling agent, forming firm, rigid gels at low temperatures (around 40 °C / 105 °F). Ideal for pastes, jellies, and jams, it cannot be reheated or frozen and provides precise gelation in professional pastry and confectionery applications.
