SELMI CONCA 400 Chocolate Conche for Bean-to-Bar Production
The SELMI CONCA 400 is a key component in the SELMI Bean to Bar range, completing the chocolate transformation process by removing unwanted acidity and humidity. This final step enhances the chocolates aromatic profile and texture, producing a flawless, homogeneous result.
Built for medium to large-scale operations, the CONCA 400 features an advanced inertial rotary system. This innovation adds orbital rotation to the standard stirring motion, dramatically improving the homogenisation and oxygenation of the chocolate. The result is a product with superior flavour complexity and smoothness.
The conching process typically runs for 8 to 12 hours. Operators have full control over the cycle using a touch screen interface, adjusting temperature, duration, air flow, and emulsion intensity. Custom programs can also be saved for repeatability and precision.
