SELMI CONCA 200 – Chocolate Conche for Bean-to-Bar Production
An essential part of the SELMI Bean to Bar range, the CONCA 200 completes the chocolate transformation process by eliminating unwanted acidity and residual humidity, enhancing both flavour and texture. This conche is designed for medium to large-scale production and is ideal for artisan chocolatiers seeking a flawless final product with deep, well-developed aromatic notes.
The updated SELMI CONCA 200 features an innovative inertial rotary system. In addition to the traditional stirring motion, it performs a simultaneous orbital rotation, significantly improving the homogenisation and oxygenation process. The result: a smoother, more aromatic chocolate.
The conching cycle typically runs for 8 to 12 hours. Operators can monitor and control all parameters via a user-friendly touch screen, adjusting duration, temperature, emulsion intensity, and air flow. Custom programs can be saved for consistency and efficiency.
