Chef Rubber Zen Yang White Cocoa Butter – 200g
Achieve a pristine, bright white finish with Chef Rubber Zen Yang White Coloured Cocoa Butter, ideal for decorating chocolate pralines, figures, cakes, and desserts. This artisan cocoa butter provides true, consistent colours for professional pastry and chocolate work.
Use on its own or mix directly into melted chocolate, then spray or paint — either onto chocolate or into a mould. It can also be applied to acetate sheets for chocolate transfers, or used for airbrushing and painting on moulds, chocolate, or fondant.
For optimal results, temper the cocoa butter before use: heat to 40°C, then cool while stirring to 31–32°C. Temperatures may vary with milk chocolate, white chocolate, or gianduja. Ensure surfaces are above 15°C to maintain shine. Once painted, allow to crystallize at room temperature before final storage.
