SOSA Pectina Xoco

SOSA Pectina Xoco is a low methoxyl amidated pectin (LMA) with retarding salts and calcium, specially designed for nappage, fruit glazes, and creamy textures. It offers controlled gelling and thermo-reversible properties, allowing for easy reheating and reworking. Perfect for fine pastry applications where shine, texture, and stability are essential.

  • Type: Low methoxyl amidated pectin with salts and calcium

  • Application: Nappage, glazes, fruit creams, and pâtisserie fillings

  • Dosage: 1–1.5% depending on texture

  • Suitable pH: > 4

  • Sugar requirement: Minimum 50–60%

  • Activation: Works with sugar and acid, activated when heated
