Description

SOSA Pectin Xoco Nappage X58 with retardant salts helps create firm, brilliant, elastic, thermo-reversible gels. Optimum for freezing and thawing. Ideal for chocolate nappage, gels with products rich in calcium rather than activated with acid. To use, mix with the sugar and bring to a boil. Slow gelling. Final effect in 24 hour.

Suggested Dosage: 8g-15g/kg (Nappage)
