SOSA Guar Gum is a thickening agent derived from a plant and is freeze stable but sensitive to some acidic mixtures. Mix in when cold then bring to the boil. Use for sauces, nectars, bread, sweet dough, gels, fruit preparations, pastry elaborations (ice creams etc) & even sausages.
Dosage is 2g -10g per kg.
