Q: Hello I am looking for attachment to add to one of your enrobers toallow me toflip the bottom erobed cookies 90mm diameter where the bottome coated will face upward upon leaving the enrober prior dropping on the cooling tunnel belt. Enrober belt width 30cm , cooling tunnel belt width 20cm.I appreciate your reply.Hassan Dwidar
A: SELMI have just developed such an attachment that connects to a cooling tunnel and can flip products such as rice cakes or waffles. The minimum width of cooling tunnel required is 250mm.
Q: it says it will temper 24 kg of chocolate in 12 mins is that straight from solid callet to temper
A: The 12 minutes is the time it takes from when the chocolate is melted in the tank. Thereafter, all of the chocolate that comes out will be tempered (assuming it is topped up with melted chocolate). To melt a full tank of chocolate will take around 30 to 45 minutes. The tank can be left on heating mode overnight so you can just commence the tempering procoess immediately you start in the morning.
