Q: Please could you give us a little more info on this product and its uses- we are having issues with chocolate becoming speckled white after we've melted it doing it by microwave etc
A: The issue you mention relates to tempering. You can temper in a microwave or in a melter - the best place to look for instructions is here: http://www.callebaut.com/uken/techniques The MC08 is just a dry melter - it is not a semi-automatic tempering machine - if that is what you need - I would recommend the Chocovision X3210 or Delta - which you can find on our website
Q: How long should tempered chocolate hold in the melter?
A: If you temper in an MC08 - then you will need to use the chocolate quite quickly unless you keep it at around 32 C for dark or 30 C for milk and stir it regularly. Of course you will need to check if the chocolate is tempered before you use it.
