Q: does the chocolate have to be tempered to use these moulds?
A: These are moulds are designed for use with ganache. Once you have put the ganache in the mould, you put it in the freezer then then pop out the solid ganache before enrobing/dipping with tempered chocolate. This technique is an alternative to making ganache in a frame and cutting it with a knife or guitar cutter.
